fix(FN-2045): keep quick chat open when selecting model override

- Add regression coverage for QuickChatFAB to ensure model dropdown selection does not dismiss the chat panel
- Verify selected model override is preserved and sent to createChatSession with provider and model id
- Add a patch changeset for @gsxdsm/fusion documenting the quick chat model-selection dismissal fix
